Strawberry Trifle (Recipe)

Ingredients
Juice of 1 large orange
50g sugar
50ml Chambord liqueur
100ml red wine
450g strawberries, halved (leave little ones whole)
100g sponge fingers
600ml good-quality fresh custard
450ml double cream
1-2 tsp golden caster sugar

1 Pour the orange juice into a small pan and add the sugar, liqueur and red wine. Bring to the boil and simmer for 4-5 minutes until syrupy. Strain through a sieve and cool.

2 Set aside a third of the strawberries, then layer the remaining fruit in a bowl with the sponge fingers. Drizzle with half the syrup.

3 Spoon the custard on top. Whip the cream in a bowl until thick and mousse-like. Fold in the sugar.

4 Spoon the cream on top of the custard, then decorate with the reserved fruit.

5 Drizzle the remaining syrup over the top and serve immediately.
