Lavender Butter Biscuits

Ingredients 50g softened butter
40g caster sugar, plus extra to sprinkle
125g plain flour
1 tsp vanilla extract
2 tbsp milk
Lavender flowers

1 Preheat the oven to 190°C/170°C fan oven/gas mark 5. Line a couple of baking sheets with baking parchment.

2 Cream the butter and sugar together in a bowl using a wooden spoon or electric hand whisk.

3 Sift over the flour and pour over the vanilla extract and milk. Stir the flour in and then start to work the ingredients together to make a dough.

4 Roll out the dough on a lightly floured board until a couple of millimetres thick. Stamp into rounds using a 5cm cutter. Press a lavender flower in the middle. Chill for 15 minutes.

5 Transfer to the baking sheets and bake in the oven for around 12 minutes until just golden round the edges. Sprinkle with caster sugar, then transfer to a wire rack to cool completely.
