Ingredients
500g plain flour
1 tsp salt
1 tsp mixed spice
½ tsp ground nutmeg
50g sugar
50g butter, plus extra to grease
7g sachet easy blend yeast
110g raisins
25g finely chopped candied peel For the crosses and glaze
A little beaten egg or milk
2 tbsp sugar, plus a little extra
100g plain flour

1 Sift the flour, salt, mixed spice and nutmeg into a bowl. Stir in the sugar. Rub in the butter until there are no lumps, then stir in the yeast, raisins and candied peel.

2 Make a well in the middle and pour in about 300ml hand-hot water. Mix with a knife to make a rough dough, then start to bring this together with your hands. Knead on a board for 5-10 minutes until soft, smooth and springy. You can also do this stage in a freestanding mixer using a dough hook. Return to the bowl, cover and leave to rise for 30 minutes.

3 Lightly grease a baking sheet. Divide the dough into 12 pieces, shape them into buns and place them on the tray about a centimetre apart to allow room to spread. Set aside in a warm place for about 40 minutes to prove.

4 Preheat the oven to 200°C/180°C fan oven/gas mark 6. Mix together the milk or egg and sugar and brush over the buns. Sift the flour into a small bowl and stir in about 8 tbsp water to make a thick paste. Spoon into a piping bag fitted with a 5mm nozzle. Pipe over the buns to make crosses.

5 Bake for 20-25 minutes until golden and just firm. Lightly tap the base of one – if it’s done it’ll sound hollow. Dissolve the sugar in a little warm water and brush over the hot buns. Transfer to a wire rack to cool before serving.
