Fresh Elderflower Cordial with Ginger and Lime (Recipe)

Ingredients
50g citric acid
25-30 elderflower heads
Zest and juice of 2 limes
2.5cm fresh root ginger, grated
1.2kg granulated sugar

1 Sprinkle the citric acid into a bowl and add the elderflower heads.

2 Pour 750ml water into a pan and bring to the boil. When the water is boiling, add the lime zest, juice, ginger and sugar. Simmer for a couple of minutes, stirring all the time, to dissolve the sugar. Pour into the bowl with the elderflower heads, stir, then cover and set aside for 24 hours.

3 Line a sieve with clean muslin and rest over a large bowl or jug. Carefully ladle the syrup into the muslin and allow it to drain.

4 4 Use a funnel to decant the syrup into sterilised bottles or jars (see tip below) and store in the fridge.


To serve
Pour 1-2 tbsp syrup into a glass and top up with still or sparkling
water.
