Ingredients
300ml double cream
A few drops vanilla extract
300ml thick Greek-style yoghurt (or add more cream if you prefer)
150g ready-made meringues, roughly broken up
250g ripe strawberries, raspberries or blackberries, or a mixture
Raspberry coulis

“For a quick raspberry coulis, mix 100g ripe raspberries with 1-2 tbsp caster sugar and press through a sieve to remove all the pips. Done.”

1 Whip the cream in a bowl with a little vanilla until still soft and starting to thicken, then gently stir in the yoghurt to give a soft, spoonable consistency.

2 Add the crushed meringues and fruit to the bowl with the cream mixture and add a drizzle of the coulis. Gently fold everything together to mix – the result should be a tantalising-looking mess shot through with swirls of colour. Spoon into clear glasses and serve.
