Making a spun sugar coil (recipe)

Put 300g granulated sugar in a heavy-based pan with 600ml cold water. Cook gently until the sugar completely dissolves. Put a sugar thermometer in the pan and bring to the boil. Let the mixture bubble until it reaches 155-160ºC. Take the pan off the heat; plunge the base into a bowl of cold water. Cool for 3-5 minutes. Oil a knife steel or a wooden spoon handle. Draw a fork through the mixture to pull a strand of spun sugar from the pan. Working quickly, wrap it round the steel or handle, then break off and repeat.
