Line a baking sheet with baking parchment. Preheat the oven to
180ºC/160ºC fan oven/gas mark 4. Grate a chunk of Parmesan. Place a pastry cutter onto the parchment and fill generously with the cheese, making sure all the parchment inside is covered. Lift up the ring and repeat to make as many rounds as you need. Bake in the oven for 12 minutes. Cool on the tray for a minute then lift off carefully with a palette knife and use to garnish soups or salads.
