Ingredients
175g butter, softened, plus extra to grease
150g light brown sugar
3 large eggs, beaten
450g plain flour
Pinch of salt
1 tsp ground mixed spice
450g mixed dried fruit
50g candied peel or glacé cherries, chopped
150ml milk
Whole blanched almonds, to decorate
Prep 20 mins cook 2-2½ hours. SERVES 12

1. Preheat the oven to 180°C/160°C fan oven/gas mark 4. Grease and line a 20-23cm springform cake tin with greaseproof paper.
2. Use an electric hand whisk to beat the butter and sugar together in a large mixing bowl until light and fluffy – the mixture will turn pale once the two ingredients are incorporated.
3. Beat in the eggs, a little at a time, beating well after each addition. If the mixture looks as though it’s going to curdle, beat in a spoonful of plain flour.
4. Sieve remaining flour, salt and mixed spice into the bowl. Tip the dried fruit and candied peel or glacé cherries on top, and pour in most of the milk.
5. Fold everything together, adding more milk as necessary to give a spoonable consistency that’s not too soft. Turn this into the prepared tin and flatten the top with a wet tablespoon.
6. Cover with almonds and bake for 1½-2 hours. Check that it’s not colouring too much – if so, cover with greaseproof paper. Cook until firm to the touch, or a skewer through the centre emerges clean. Cool in the tin for 10 minutes.
