Make a Chocolate Collar (Recipe)

Measure the circumference of the cake using a piece of string, add on a 5cm overlap, then measure and cut this length of strip from baking parchment. Make sure the depth of the strip stands a couple of centimetres above the top of the cake. Melt 100g dark chocolate in a bowl resting over a pan of simmering water, making sure the base doesn’t touch the water. Once melted, take the bowl off the heat and cool for 10 minutes. Brush the chocolate generously all over the strip and set aside in a cool place until it has dried. Once the chocolate has almost set, lift up the strip and place it around the outside of the cake. Leave to harden. Peel the parchment away from the chocolate.
