Warm Clementines with Brandy Syrup (Recipe)

Ingredients
12 clementines
50g butter
4 tbsp light muscovado sugar Juice of 4 oranges
125ml brandy
Greek yoghurt, to serve

Prep 15 mins cook 7 mins
SERVES 6

1 Peel the clementines and take off all the white pith from the skin. Cut each in half through the equator.
2 Melt the butter in a shallow sauté pan, then stir in the sugar, orange juice and brandy. Bring to the boil and continue to cook for 2 minutes.
3 Add the peeled clementines and cook in batches for about 5 minutes, turning halfway through. Keep spooning the sauce over the fruit as it cooks, then transfer to a serving dish. Serve warm with Greek yoghurt.
